Processing Method: scaled, gilled, gutted; ike jime (a Japanese method used on the fishing boat that instantly paralyzes the fish and drains them of blood. It's considered the most humane way to kill a fish and leads to an incredibly high-quality texture and flavor. Ike jime allows the fish to develop rich umami as it ages, and the fish keeps much longer than products from regular fishing practices. This is a rare delicacy!)
